Granola is one of my favorite components for a successful breakfast. But the best granola you will ever eat is the one you make yourself because you can add all the stuff you like! You can endlessly combine with ingredients: seeds, coconut flakes, nuts, dried fruit and berries, pieces of chocolate… A good granola just has to be crunchy, tasty and not overly sweet but just sweet enough to get the necessary energy to start your day. Besides granola I also love apple crumble, therefore I decided to combine the two for this recipe in a ‘apple crumble granola’.

INGREDIENTS (for 1 portion)

For the granola (6-8 portions) 4 cups oats 1 apple 3 tbsp vegetable oil 1 tbsp honey 1½ tsp cinnamon ½ cup nuts of choice (I used almonds and walnuts) 3 tbsp sesame seeds ¼ cup raisins ¼ cup dried cranberries

For the caramelized banana 1 ripe banana 1 tbsp honey 1 tsp cinnamon ½ tbsp vegetable oil

Serve with 1 cup Greek yogurt


For the granola:

Preheat the oven on 180°C. Grease a baking tray with one tbsp vegetable oil. Mince the nuts and grate the apple. In a large bowl: Stirr the oats, minced nuts, grated apple, sesame seeds, honey, cinnamon and 2 tbsp of vegetable oil. Spread the mixture on the baking tray. Bake for 30 minutes but make sure to check and stir the mixture every 10 minutes so all sides can become golden brown. The oats may chunck together a bit but that makes it even more delicious! For the last 10 minutes, add the raisins and cranberries. Allow to cool completely before serving. Place the rest of the granola in an airtight container.

For the caramelized banana:

Heat some oil in a small pan. Cut the banana lengthwise in two pieces and place them in the pan. Pour the honey over the bananas, turn them around so they can bake at both sides. When the bananas are warm and soft, sprinkle with cinnamon and serve them in a bowl on top of the Greek yogurt and the granola.
