MORNING GLORY: BANANA EGG PANCAKES
There’s nothing as good as pancakes for breakfast. And no recipe as easy as this one! Flourless, two ingredient pancake: eggs and bananas. Super yummy, healthy and you can top it with some fruit, nuts and seeds.
I chose peach, kiwi, raisins, dried banana, coconut flakes, dried pineapple, dried papaya and on top off it: one tablespoon of peanut butter and one tablespoon of berry jam but the options are endless!

INGREDIENTS (for two pancakes Ø 15 cm)
1 (overripe) banana 1 big egg 1 ts cinnamon (optional) Toppings Vegetable oil for baking
Mash the banana and mix the egg through the mixture until it’s smooth. Add some cinnamon, heat a little vegetable oil (I used coconut oil) in a small frying pan, add half of the banana mixture and bake until the pancake looks golden brown at both sides. Repeat with the rest of the mixture, add your toppings and enjoy your morning!
